Mmmmmm food, the best part of camping together is eating together (awwww). But it takes some work and co-ordination. This is one area we could use some help!

Shared Menu Notes

  • Menus should plan for 60 people (I think? 50 plus the few extra there might be... -Heather)
  • This is a useful guide to quantities: http://www.lcv.org.uk/howto/catering.html
  • No meat is provided in the shared menu. Please bring your own for the BBQ on Sunday night (see below) and if you want to cook your own to supplement (though cooking space is limited and shared food is priority!).
  • Assume that there is no refrigeration available. Even if there is a fridge, it will not cope with food for all of us
  • Bring your own plates, cup and cutlery

Friday Dinner

This will likely be a smaller dinner than Saturday, as not everyone will be there. Quantities on the cautious side!

  • Menu?: curry, unless someone has a better idea
    • dhal, rice and a vegetable curry; and possibly bhagia, and I fancy having a go at flat breads, how hard can it be to not make bread rise?

  • Ingredients needed?:

1.bhaghia and chapatis

  • veg oil
  • chapati flour
  • 4 ripe plantain
  • bag of chickpea flour
  • salt
  • a goodly amount of onions
  • 1kg carrots
  • green chilies
  • cumin[will put on the herb run]
  • 1kg raisins[excess for sunday salad]
  • 3 bunches fresh coriander
  • mint[as above]

[I can get the flours and plantain if necessary]

2. curry

  • 2kg red lentils
  • curry paste[mild/korma] 1 jar
    • 2 kg rice
    • some seasonal vegetables [or is this too vague]

Saturday Breakfast

  • Bring and cook/assemble your own please!
    • We can provide soya milk ?
      • 250ml per person ?

Saturday Lunch

  • Sandwiches and leftovers - no chefs
  • Ingredients needed? (Any reasonable suggestions welcome!)
    • Bread (10 loaves)
    • Cheese (quantity 100g per person)
    • Maybe Houmous as vegan sandwich option - w carrot or salad?
    • Tomatoes (15 medium sized)
    • Cucumbers (5)
    • Mayonnaise or pickle or something...

Saturday Dinner

This will likely be the main meal of the weekend, with the most people, so should be a big one.

Two more volunteers would be good in addition to the two already here. No experience necessary!

  • Sous Chef volunteers!?: Evan, Julie, Sarah
  • Menu: All dishes feed 60 Evan: Can do a good lentil/feta/mint salad that is very filling, if we can keep enough feta around for a night
    • Could we also have a vegan version without feta?
  • Ingredients needed?
    1. Lentil/feta salad (feeds 60 as very filling side dish):
      • 10 cup lentils
      • about 20 cloves garlic
      • some bay leaves
      • 2 kg feta
      • 30 red pepper
      • 30 bunch mint[is this loads of mint or the meagre supermarket size]
      • cumin
      • 30 small red onion
      • 1.33L balsamic vinegar
      • 1.33L tbsp olive oil
    2. Carrot and Orange Salad
      • 5kg of Carrots
      • 1L of Orange Juice
      • 1/2 L of Olive Oil
      • (orange flower or rosewater if available)(I have these and will bring them -- tallpaul)
      • 4 bunches of Coriander
      • Ginger
      • Cinnamon
    3. Couscous
      • 3 - 3 1/2 couscous
      • 1/2 kg Raisins or sultanas
      • 5 bunches fresh parsley
      • 10 lemons (juice of)
    4. Sauce
      • 2 catering size tins of tomatoes (2 X 2 1/2 Kg)
      • 3kg ish Aubergines and/or courgettes
      • 1kg onions
      • 2 -3 bulbs garlic
      • Cumin

Sunday Breakfast

Sunday Lunch

Sunday Dinner

We'd like to have a BBQ with shared salads, condiments, sides, etc, but a (mostly) BYOMeat/veg main policy. People will likely be trickling out at this point, so again, quantities on the cautious side...

    • A few veggie burgers just in case
  • Ingredients needed?
    • Veggie burgers (20-30) - make sure to get the vegan kind, not Quorn
  • Making veggie burgers is straight forward!!

if we are making burger and not getting the ready made sort

    • 500g oats
    • large tin each of redkidney, butter, borlotti beans
    • 3 green peppers
    • olive oil
    • garlic
    • 2 eggs [unless a vegan knows how to bind this without egg]
    • 2 onions
    • potatoes to roast in the fire

Snacks and Drinks

Non-alcoholic drinks, that is - but do bring a bottle of wine to share at dinner if you like

    • A spot of juice for the weekend? If we can find inexpensive stuff that isn't completely artificial.

Cooking Equipment

We have to bring our own cooking equipment - pots, pans, knives, everything! Please list what equipment is needed to cook the menus above, especially if you are a Head Chef. If you have something you can bring please add your name, and whether or not you can travel with it yourself. Again, bring your own plates, cup and cutlery or you'll be eating with your fingers! :)

  • BBQ grills for camp fire
  • 10 litre and 5 litre cook pots (Robert_A can provide, transport may be needed)
  • 3 off 6 litre and 1 off 10 litre pans (Alex Z. bringing by car)
  • katf bringing large jam pan, 4 large bowls and one huge serving dish (for dry foods), dualit 6 slice toaster, tea and coffee pots, 2 cheese graters, large colander, kettle
  • Saturday: 2 plastic containers for salad, I pan for sauce I for boiling water/couscous (will be bringing large metal bowl for couscous salad. Cheese graters or better still food processor with grater.

Allergies? Carnivore? Need to talk about it? Do it here!

    • Breakfast( & Lunches)** Might it be better to bulk buy bread, spreads and muesli/cereals for this, rather than have lots of people bringing small amounts of food. It wouldn't be a big job for someone to volunteer to slice bread and put stuff out and might save a lot of mess.
