Angelica Cornbread

- 1 recipe basic brown rice (1 cup uncooked/3 cups cooked)
- 1 1/3 cups rolled oats
- 1 1/3 cups cornmeal/polenta
- 1/2 table spoon sea salt
- 3 cups apple cider or apple juice
- 1/4 cup unrefined corn oil, plus more for baking pan
- 2 table spoons sesame seeds
Preheat oven to 180 C. In large mixing bowl, combine cooked rice, rolled oats, polenta, salt, apple juice, corn oil. Mix well. Oil a 9" x 5" x 3" pan and sprinkle with sesame seeds. Fill pan with batter. Bake on middle rack for 1 hour, 15 minutes or until toothpick comes out clean.
NOTE: If recipe is multiplied by 7 (for 50 people), 21 cups of apple juice is equal to 4.96 liters
