An ostler was the guy who got your horse round to the front door for you when you left. A cycle ostler facilitates cycling in a similar way. On longer trips with groups the ostler may ride in support of others, and help out by with navigation, nutritional and mechanical support, and carrying heavier bits of kit. It's a nicer trip for everyone that way.
